Whey
Whey or Milk Serum is the liquid remaining after milk has been curdled and strained. It is a by-product of the manufacture of cheese or casein and has several commercial uses. Sweet whey is manufactured during the making of rennet types of hard cheese like cheddar or Swiss cheese. Acid whey (also known as "sour whey") is obtained during the making of acid types of cheese such as cottage cheese.

Molke
Molke (auch Käsewasser, Sirte oder Schotte genannt) ist die wässrige grünlich-gelbe Restflüssigkeit, die bei der Käseherstellung entsteht. Sie besteht zu 94 % aus Wasser, zu 4–5 % aus Milchzucker und ist nahezu fettfrei. Außerdem enthält sie Milchsäure, die Vitamine B1, B2 (dies bewirkt die grünliche Farbe) und B6, Kalium, Calcium, Phosphor und andere Mineralstoffe, doch vor allem 0,6–1 % Molkenprotein. Das ist deutlich weniger Eiweiß als in der Milch. Dort ist das Kasein Haupteiweiß.

Lactosérum
Le lactosérum, également appelé « petit-lait », est la partie liquide issue de la coagulation du lait. La coagulation du lait provient soit de l'action d'une présure (fabrication de fromage), soit de l'action d'un acide (fabrication de caséines).

Vassle
Vassle, även vassla är en biprodukt från osttillverkning. När löpe enzymatiskt spjälkar de fettlösliga proteinerna kasein innesluts mjölkfettet. Det som då blir kvar av mjölken kallas vassle. Det mesta av mjölken består av vatten, och därför utgörs nästan allt innehåll i vasslen av vatten, men där finns även vattenlösliga ämnen som mjölksocker och mjölksyra.

Serwatka
Serwatka - ciecz prawie klarowna, będąca pozostałością po całkowitym ścięciu mleka krowiego. Zawiera do 5% laktozy, do 1% białka i do 0,5% tłuszczu oraz sole mineralne i witaminy. Stanowi połowę suchej masy mleka (druga połowa jest zawarta w oddzielonym od serwatki skrzepie).
W warunkach przemysłowych serwatka jest groźnym ekologicznie odpadem przy produkcji sera lub kazeiny. Objętościowo na 1. część uzyskanego sera wypada prawie 10 części serwatki. Zagospodarowywana jest jako pasza lub surowiec do produkcji laktozy. Coraz częściej jest również wykorzystywana w przemyśle spożywczym do produkcji rozmaitych napojów mlecznych na bazie serwatki.
