La torréfaction est l'action de torréfier un aliment. Elle donne un arôme qui rappelle l'odeur des aliments un peu grillés, calcinés. On utilise la torréfaction aussi bien dans les vins rouges que pour le café ou le cacao. On peut aussi torréfier des amandes, des noisettes,...
