Tannins are astringent, bitter-tasting plant polyphenols that bind and precipitate proteins. The term tannin refers to the use of tannins in tanning animal hides into leather; however, the term is widely applied to any large polyphenolic compound containing sufficient hydroxyls and other suitable groups (such as carboxyls) to form strong complexes with proteins and other macromolecules. Tannins have molecular weights ranging from 500 to over 3,000.

Les tanins sont des substances d'origine organique que l'on trouve dans pratiquement tous les végétaux, et dans toutes leurs parties (écorces, racines, feuilles, etc.), caractérisées par leur astringence (sensation de dessèchement en bouche). Die Tannine (von franz. tanin Gerbstoff) sind natürlich vorkommende Polyphenole, die sich alle von der Gallussäure ableiten lassen. Deswegen spricht man häufiger auch von Gallotanninen. Bekannteste Verbindung und Namensgeber dieser Stoffgruppe ist das Gallotannin. Tannine kommen unter anderem in den Schalen, Kernen und Stielen von Weintrauben vor. Sie gelangen beim Maischen in den Traubensaft. Sie dienen der Pflanze letztlich als Abwehr gegen Pflanzenfresser.

Taniny - związki organiczne zbudowane z wielu cząsteczek kwasu galusowego (3,4,5-trihydroksybenzoesowego) i D-glukozy.Żółty bezpostaciowy proszek. Występuje w herbacie, korze drzewnej oraz w tzw. galasach (cecidium) powstających na liściach, na których rozwijają się roślinożerni przedstawiciele galasówek (Cynipidae). Zaliczany jest do grupy związków zwanych garbnikami - jest stosowany do wyprawiania skór zwierzęcych, do produkcji barwników, jako zaprawa w farbiarstwie oraz jako środek ściągający i przeciwzapalny w medycynie.
