İşkembe çorbası is a
tripe soup prepared in
Greece,
Turkey and the
Balkans. It is often seasoned with vinegar or lemon juice.The Bulgarian version of the soup is called
Shkembe chorba, and is somewhat different.The
Greek version is - somewhat incorrectly - called patsás (πατσάς), from the Turkish word paça 'cuff' or 'foot'. (Though skempés {σκεμπές}, from Turkish işkembe; 'tripe' is also used.) The Greek version sometimes uses other
offal from goats or sheep, and with or without pigs' feet; it may be seasoned with lemon and garlic and thickened with
avgolemono.
