The Olive (Olea europaea) is a species of small tree in the family Oleaceae, native to coastal areas of the eastern Mediterranean region, from Lebanon and the maritime parts of Asia Minor and northern Iran at the south end of the Caspian Sea. Its fruit, the olive, is of major agricultural importance in the Mediterranean region as the source of olive oil.

L'olive est le fruit de l'olivier, arbre fruitier caractéristique des régions méditerranéennes. Au plan botanique, c'est une drupe, à peau lisse, à enveloppe charnue riche en matière grasse, renfermant un noyau très dur, osseux, qui contient une graine, rarement deux. Sa forme ovoïde est typique. Sa couleur, d'abord verte, vire au noir à maturité complète, vers octobre-novembre dans l'hémisphère nord.

L'olivo o ulivo (Olea europaea L.) è una pianta da frutto. Originario del Medioriente, è utilizzato fin dall'antichità per l'alimentazione. I suoi frutti, le olive, sono impiegate per l'estrazione dell'olio e, in misura minore, per l'impiego diretto nell'alimentazione. A causa del sapore amaro dovuto al contenuto in polifenoli, l'uso delle olive nell'alimentazione richiede però trattamenti specifici finalizzati alla deamarizzazione, realizzata con metodi vari.
