monounsaturated fat

In nutrition, monounsaturated fats are fatty acids with two double-bonded carbons in the molecule, with all of the others single-bonded carbons, in contrast to polyunsaturated fatty acids which have more than one double bond.

Any dietary fat whose predominant fatty acids have spare positions for two hydrogen atoms. Almond oil and olive oil are particularly rich in monounsaturated fat.
