Monosaccharides (from Greek : single, sacchar: sugar) are the simplest carbohydrates. They cannot be hydrolyzed into simpler sugars. They consist of one sugar and are usually colorless, water-soluble, crystalline solids. Some monosaccharides have a sweet taste. Examples of monosaccharides include glucose (dextrose), fructose, galactose, xylose and ribose. Monosaccharides are the building blocks of disaccharides like sucrose (common sugar) and polysaccharides (such as cellulose and starch). Further, each carbon atom that supports a hydroxyl group (except for the first and last) is chiral, giving rise to a number of isomeric forms all with the same chemical formula. For instance, galactose and glucose are both aldohexoses, but they have different chemical and physical properties.

Les oses (ou monosaccharides) sont les monomères des glucides. Ils ne sont pas hydrolysables. Tout comme les diholosides (ou disaccharides), ils possèdent un pouvoir sucrant, et sont solubles dans l'eau. On les distingue par la longueur de leur chaîne de carbone, comme suit : Les trioses oses à 3 carbones, (glycéraldéhyde, dihydroxyacétone) Les tétroses oses à 4 carbones, (érythrose, thréose, érythrulose)Les pentoses oses à 5 carbones, (désoxyribose, ribose, arabinose, xylose, lyxose, xylulose)Les hexoses oses à 6 carbones, (allose, altrose, glucose, mannose, gulose, idose, galactose, talose, psicose, fructose, sorbose, tagatose)Les heptoses : oses à 7 carbones,  sédoheptulose, mannoheptulose.

Cukry proste (inaczej: monosacharydy) – węglowodany w których strukturze występuje od 3 do 7 atomów węgla. Monosacharydy mogą występować w postaci pierścieniowej jeśli posiadają co najmniej 4 atomy węgla w cząsteczce.Wszystkie cukry proste łatwo krystalizują i są rozpuszczalne w wodzie. Są substancjami bezwonnymi, bezbarwnymi, na ogół charakteryzują się słodkim smakiem, choć np. β-D-mannoza jest słodko-gorzka.Można podzielić je ze względu na liczbę atomów węgla:triozy,tetrozy,pentozy,heksozy,heptozy; a także ze względu na rodzaj grupy karbonylowej:ketozy (grupę ketonową C=O),aldozy (grupę aldehydową -CHO).

I monosaccaridi sono composti organici formati da carbonio, idrogeno e ossigeno,(conosciuti anche come zuccheri semplici) sono i carboidrati che non possono essere demoliti per idrolisi. Vengono classificati a seconda del tipo di gruppo carbonilico (aldeidico o chetonico) e dal numero di atomi di carbonio contenuti nella molecola,che possono variare da 3 a 7. Entrambi i sistemi di classificazione possono essere condensati in un unico termine; per esempio un aldoso con quattro atomi di carbonio è un aldotetroso, un chetoso con cinque atomi di carbonio è un chetopentoso. In generale il suffisso da aggiungere al nome del carboidrato è, per gli zuccheri aldeidici -oso (oppure -osio) e per quelli chetonici -uloso (oppure -ulosio); comunque in entrambi i casi, ci sono delle eccezioni.
