Lipids can be broadly defined as any fat-soluble (hydrophobic), naturally-occurring molecules. The term is more-specifically used to refer to fatty-acids and their derivatives (including tri-, di-, and monoglycerides and phospholipids) as well as other fat-soluble sterol-containing metabolites such as cholesterol.

Les lipides constituent la matière grasse des êtres vivants. Ce sont de petites molécules hydrophobes ou amphipathiques principalement constituées de carbone, d’hydrogène et d’oxygène et ayant une densité inférieure à celle de l'eau. Les lipides peuvent être à l'état solide, comme dans les cires, ou liquide, comme dans les huiles.

Lipide (von griechisch λίπος lípos „Fett“) ist eine Sammelbezeichnung für ganz oder zumindest größtenteils wasserunlösliche (hydrophobe) Naturstoffe, die sich dagegen aufgrund ihrer geringen Polarität sehr gut in hydrophoben bzw. lipophilen Lösungsmitteln wie Hexan lösen. Ihre Wasserunlöslichkeit rührt vor allem von den langen Kohlenwasserstoff-Resten, welche die allermeisten Lipide besitzen.

W biochemii nazwą lipidy (gr. λίπος lípos tłuszcz) określa się niejednorodną grupę związków chemicznych pochodzenia biologicznego, które charakteryzują się tym, że łatwo rozpuszczają się w rozpuszczalnikach organicznych takich jak: metanol, aceton, chloroform, przeciwnie nie rozpuszczają się lub słabo rozpuszczają się w wodzie. Ta własność zależy od ich budowy. Niegdyś terminem tym określano tylko te związki zawierające kwasy tłuszczowe, które wykazywały własności amfifilowe.

I lipidi (detti anche grassi, dal greco lypos, grasso) sono molecole organiche, presenti in natura, raggruppate sulla base delle loro proprietà comuni di solubilità: sono insolubili in acqua (per questo si definiscono idrofobi), mentre sono solubili in solventi organici non polari, come l'etere o l'acetone.
