Lecithin is a generic term to designate any group of yellow-brownish fatty substances occurring in animal and plant tissues composed of phosphoric acid, choline, fatty acids, glycerol, glycolipids, triglycerides, and phospholipids (e.g., phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol).

Lecithine (deutsch: Lezithine, altgriechisch: λέκιθος = Eidotter) ist der klassische Name für eine Gruppe chemischer Verbindungen, die so genannten Phosphatidylcholine. Dabei handelt es sich um Lipide, genauer Phospholipide, die sich aus Fettsäuren, Glycerin, Phosphorsäure und Cholin zusammensetzen. Lecithine sind Bestandteile der Zellmembranen tierischer und pflanzlicher Lebewesen. Sie sind Begleitstoffe in Fetten und fetten Ölen und besonders reich in Eidottern und pflanzlichen Samenzellen vorhanden.

La phosphatidylcholine est plus connue sous le nom lécithine en référence au mot grec Lekithos, le jaune d'œuf dont elle a été extraite initialement. C'est un lipide de la classe des phosphoacylglycérols. En fait, la définition exacte de la lécithine peut dépendre du contexte.

Lecitin är ett fettämne som finns i alla celler. Det används som emulgeringsmedel i många produkter och har E-nummer E 322. Utvinns till största delen från soja men finns även rikligt i ägg. Är en av beståndsdelarna i galla. Ett annat namn för lecitin är fosfatidylkolin.

Lecytyna (nazwa chemiczna: fosfatydylocholina) — fosfolipid, który zwykle otrzymuje się z żółtek jajek kurzych (z gr. λεκιθος) lub z ziaren  soi. Jest ona niezbędna do funkcjonowania układu nerwowego zwierząt i ludzi. Jest ona dostępna komercyjnie w postaci czystej i jest stosowana jako dodatek do żywności oraz w celach leczniczych. W Unii Europejskiej, oznaczona jest kodem E 322, w listach dodatków do żywności.
