Keratin refers to a family of fibrous structural proteins. Keratin is the key of structural material making up the outer layer of human skin. It is also the key structural component of hair and nails. Keratin monomers assemble into bundles to form intermediate filaments, which are tough and insoluble and form strong unmineralized tissues found in reptiles, birds, amphibians, and mammals. The only other biological matter known to approximate the toughness of keratinized tissue is chitin.

Keratin (von griech. kéras, Genitiv kératos = Horn) oder Hornsubstanz ist ein Sammelbegriff für verschiedene wasserunlösliche Faserproteine, die von menschlichen oder tierischen Organismen gebildet werden. Aufgrund ihrer molekularen Konformation (a-Helix oder ß-Faltblatt) unterscheidet man a- und ß-Keratine.

Keratyna jest białkiem fibrylarnym (nierozpuszczalnym w wodzie, cząsteczki białka tworzą włókna). W komórkach nabłonkowych człowieka zidentyfikowano dwadzieścia izoform cytokeratyn o masie cząsteczkowej od 40 do 70 kDa, natomiast w komórkach innych ssaków wykazano około dziesięciu izoform tzw. keratyn twardych, obecnych w wytworach skóry: piórach, wełnie, rogach, paznokciach i innych.
