Gastrointestinal tract
The organ along which food travels from the mouth until the undigested remnants emerge as stools. Mixing and some digestion occur in the stomach where the environment is acidic; most digestion and absorption of nutrients occurs in the small intestine; the large intestine, principally the colon, contains very large numbers of micro-organisms capable of fermenting food components that have escaped digestion in the small intestine.GelA complex solid and liquid food system, interconnected to give a network of intermingled particles.
