Decantation is a process for the separation of mixtures. Usually a small amount of solution must be left in the container, and care must be taken to prevent a small amount of precipitate from flowing with the solution out of the container. It is generally used to separate a liquid from an insoluble liquid (e.g. in red wine, where the wine is decanted from the potassium bitartrate crystals). For example, to obtain a sample of clear water from muddy water, muddy water is left in a container until the mud settles, and then the clear water is poured into another container.

Der Ausdruck Dekantieren (franz.: décanter) bezeichnet den Prozess der Abtrennung eines ungelösten Stoffes aus einem Flüssigkeitsgemisch. Nach einer mehr oder weniger langen Ruhezeit in einem Gefäß trennen sich Feststoffe durch Absetzen, das Dekantat. Nicht mischbare Flüssigkeiten (z. B. Wasser-Öl) trennen sich auf Grund der unterschiedlichen Dichte, meist schwimmt das Öl auf dem Wasser. Durch vorsichtiges Abgießen einer Schicht kann man die Stoffe trennen, „an einer Kante entfernen/trennen“.

La décantation est une opération de séparation mécanique, sous l'action de la gravitation, de plusieurs phases non-miscibles dont l'une au moins est liquide. On peut ainsi séparer soit plusieurs liquides non-miscibles de densités différentes, soit des solides insolubles en suspension dans un liquide.

Dekantera innebär att avtappa en vätska ur ett kärl så att bottensatsen inte följer med. Tekniken används vanligtvis för lagrade viner.
