Collagen is a group of naturally occurring proteins found in animals, especially in the flesh and connective tissues of mammals. It is the main component of connective tissue, and is the most abundant protein in mammals, making up about 25% to 35% of the whole-body protein content. Collagen, in the form of elongated fibrils, is mostly found in fibrous tissues such as tendon, ligament and skin, and is also abundant in cornea, cartilage, bone, blood vessels, the gut, and intervertebral disc. The fibroblast is the most common cell which creates collagen.

Kollagen (internationalisierte Schreibweise Collagen; Betonung auf der letzten Silbe) ist ein nur bei Menschen und Tieren vorkommendes Strukturprotein des Bindegewebes (genauer: der extrazellulären Matrix). Im menschlichen Körper ist Kollagen mit über 30 % Anteil am Gesamtgewicht aller Eiweiße (Proteine) das am meisten verbreitete Eiweiß. Es ist ein wesentlicher organischer Bestandteil von Knochen, Zähnen, Knorpel, Sehnen, Bändern und Haut. Kollagenfasern besitzen eine enorme Zugfestigkeit und sind kaum dehnbar. Seinen Namen erhielt das Kollagen (aus dem Griechischen: Leim erzeugend) ursprünglich aufgrund seiner früheren Nutzung als Knochenleim im Holzhandwerk.

Le collagène est une glycoprotéine fibreuse dont le rôle peut être comparé à une armature. C’est la protéine la plus abondante de l’organisme. Il est secrété par les cellules des tissus conjonctifs.
Contrairement à l’élastine présente aussi dans les tissus conjonctifs, le collagène est inextensible et résiste bien à la traction. Il est constitué de différents types selon leur localisation. Il est notamment indispensable aux processus de cicatrisation. Après certaines transformations, on peut en faire de la colle.

Kollagen är ett fiberprotein som utgör en tredjedel av allt protein i däggdjur. I en ponny, till exempel, är mer än 25% av proteinet kollagen. Proteinet finns även i andra flercelliga djur. Kollagen finns framför allt i stödjevävnad som ben, hud, senor och blodkärlsväggar. Vanligt kollagen bildar fiberstrukturer som ger struktur, stadga och är mycket motståndskraftiga mot slitande krafter.

Ubytek kolagenu ze skóry powoduje powstawanie zmarszczek, w trakcie jej starzenia. Kolagen wypełnia także rogówkę oka, gdzie występuje w formie krystalicznej. Kolagen jest powszechnie stosowany w kosmetykach, zwłaszcza w kremach i maściach przeciwzmarszczkowych. Stosuje się go też jako wypełniacz w chirurgii kosmetycznej - np. do wypełniania ust.
