Broth is a liquid food preparation, typically consisting of either water or an already flavored stock, in which bones, meat, fish, cereal grains, or vegetables have been simmered. Broth is used as a basis for other edible liquids such as soup, gravy, or sauce. It can be eaten alone or with garnish. If other ingredients are used, such as rice, pearl barley or oats, it is then generally called soup.

Brühe (von mittelhochdeutsch brüeje, „heiße Flüssigkeit“), in Österreich (klare) Suppe genannt, in der Schweiz Bouillon, ist Wasser, das durch darin gegarte Lebensmittel mit Aromen, Mineralstoffen und Fett angereichert ist. Brühe dient als Grundlage für Suppen, Saucen und als Kochflüssigkeit für Fleisch, Geflügel, Fisch und Gemüse. In Brühe gegarte Lebensmittel bleiben aromatischer, da die Brühe bereits Geschmacks- und Mineralstoffe enthält, die zum Teil ins Gargut übergehen, anstatt ihm diese Stoffe zu entziehen.
