Antioxidant
An antioxidant is a molecule that inhibits the oxidation of other molecules. Oxidation is a chemical reaction that transfers electrons or hydrogen from a substance to an oxidizing agent. Oxidation reactions can produce free radicals. In turn, these radicals can start chain reactions. When the chain reaction occurs in a cell, it can cause damage or death to the cell. Antioxidants terminate these chain reactions by removing free radical intermediates, and inhibit other oxidation reactions. They do this by being oxidized themselves, so antioxidants are often reducing agents such as thiols, ascorbic acid, or polyphenols.

Antioxidantien
Antioxidantien (auch Oxidationshemmer) werden in Lebensmitteln, in Arzneimitteln und in Kunststoffen eingesetzt, um die Oxidation empfindlicher Moleküle zu verhindern, also die Reaktion mit dem Luftsauerstoff oder anderen oxidierenden Chemikalien. Meistens wirken sie als Radikalfänger. Antioxidativ wirksame Substanzen kommen auch natürlicherweise in der Nahrung und im menschlichen Organismus vor. Ob sie – wie von den Produzenten behauptet – zum Schutz vor Schädigungen von z. B. Zellkernen und Zellmembranen dienen und somit Krankheiten wie Arteriosklerose, Krebs und Grauen Star positiv beeinflussen, ist umstritten. Krebspatienten wird von der Einnahme sogar abgeraten, da bei der Behandlung von Tumoren freie Radikale entstehen sollen, um die Tumorzellen abzutöten. Antioxidantien verringern deshalb den Heilungserfolg mancher Krebstherapien.

Antioxidant
Antioxidanter är ämnen med en kemisk struktur som har förmågan att motverka oxidation, skadeverkan från vissa syre- och kväveformer. Levande varelsers användning av syre för andning och energiförbränning är ofrånkomligt förenat med bildning av destruktiva fria radikaler.

Przeciwutleniacze (antyoksydanty,antyutleniacze) - grupa związków chemicznych, które są stosowane w zapobieganiu niepożądanym procesom utleniania, przez co przedłużają trwałość produktów.
Dozwolone przeciwutleniacze stosowane w przemyśle spożywczym:
- E-270 kwas mlekowy - pełni także funkcję regulatora kwasowości
- E-330 kwas cytrynowy - pełni także funkcję regulatora kwasowości i stabilizatora
- E-300 kwas askorbinowy - witamina C; pełni także funkcję substancji klarującej, regulatora kwasowości i stabilizatora
- E-301 askorbinian sodu - pełni także funkcję regulatora kwasowości i stabilizatora
- E-302 askorbinian wapnia - pełni także funkcję regulatora kwasowości i stabilizatora
- E-304 estry kwasów tłuszczowych i kwasu askorbinowego - pełnią także funkcje stabilizatorów
- E-306 mieszaniana tokoferoli
- E-307 alfa-tokoferol
- E-308 gamma-tokoferol
- E-309 delta-tokoferol
- E-310 galusan propylu
- E-311 galusan oktylu
- E-312 galusan dodecylu
