amylase

Amylase is the name given to glycoside hydrolase enzymes that break down starch into glucose molecules. Amylase is also known as Ptyalin. Although the amylases are designated by different Greek letters, they all act on α-1,4-glycosidic bonds. Under the original name of diastase, amylase was the first enzyme to be found and isolated (by Anselme Payen in 1833).

Amylasen sind Enzyme, die sowohl im Pflanzen- als auch im Tierreich vorkommen. Ihre Wirkung besteht darin, dass sie Polysaccharide (z. B. Stärke) an den Glykosidbindungen spalten und abbauen. Entdeckt wurde Amylase (damals noch Diastase) 1833 von dem französischen Chemiker Anselme Payen in einer Malzlösung. Diastase war das erste Enzym, das man entdeckte.

Amylaza (EC 3.2.1.1) to enzym hydrolityczny z grupy hydrolaz rozkładający skrobię i inne wielocukry. Występuje w soku trzustkowym (jest produkowana przez zewnątrzwydzielniczą część trzustki) i w ślinie (jest produkowana przez ślinianki). Zapoczątkowuje proces trawienia skrobi.Amylaza jest także syntezowana w owocach wielu roślin podczas dojrzewania, powodując, że stają się słodsze, także podczas kiełkowania ziaren zbóż. Amylaza z ziaren ma istotne znaczenie przy produkcji słodu.

Amylase is een verteringsenzym dat amylose ofwel amylum (een niet-vertakte vorm van zetmeel) afbreekt. Het komt zowel voor in het dierenrijk als in het plantenrijk.Amylase wordt als een hydrolase (een enzym, dat hydrolyse als mechanisme toepast, dat wil zeggen het afsplitsen van een watermolecuul), gekenmerkt.
