Vinegar is a liquid produced from the fermentation of ethanol in a process that yields its key ingredient, acetic acid. The acetic acid concentration ranges typically from 4 to 8 percent by volume for table vinegar (typically 5%) and higher concentrations for pickling (up to 18%) although in some countries the minimum strength may be less. Natural vinegars also contain smaller amounts of tartaric acid, citric acid, and other acids. It has been used since ancient times, and is an important element in Western and European, Asian, and other traditional cuisines of the world.

Le vinaigre est un liquide acide obtenu grâce à l'oxydation de l'éthanol dans le vin, le cidre, la bière et autres boissons fermentées. Le vinaigre commun comporte une concentration d'environ 5% à 8% d'acide acétique. L'acide tartrique et l'acide citrique se retrouvent, en plus faibles concentrations, dans les vinaigres naturels.

Essig (lat. Acetum) ist ein stark sauer schmeckendes Würz- und Konservierungsmittel, das durch Fermentation alkoholhaltiger Flüssigkeiten mit Essigsäurebakterien (Essigmutter) hergestellt wird. Die Essigbereitung zählt zu den ältesten Lebensmittelherstellungsverfahren der Menschheit. In Deutschland darf Speiseessig nach der Verordnung über den Verkehr mit Essig und Essigessenz von 1972 zwischen 5 % und 15,5 % Essigsäure enthalten. Auch mit Wasser verdünnte Essigsäure wird oft als Essig bezeichnet, in Deutschland darf allerdings im Speiseessig keine ohne Mikroorganismen chemisch hergestellte Essigsäure enthalten sein.

Ocet - wodny roztwór kwasu octowego o charakterystycznym ostrym zapachu i kwaśnym smaku, zwykle 6-procentowy lub 10-procentowy. Powstaje w wyniku fermentacji octowej alkoholu. Stosowany jako przyprawa zakwaszająca. Spożywany w nadmiarze jest szkodliwy, w niewielkich ilościach pobudza apetyt i sprzyja lepszemu trawieniu ciężkostrawnych potraw.

L'aceto è un liquido acido ottenuto grazie all'azione degli Acetobacter, che in presenza di aria ossidano l'etanolo contenuto nel vino, nel sidro, nella birra e altre bevande alcoliche fermentate, oppure in altre materie prime quali cereali, frutta o miele, trasformandolo in acido acetico.
