Speck
Speck is a distinctively juniper-flavored prosciutto originally from the region of Alto Adige/Südtirol. Speck's origins at the intersection of two culinary worlds is reflected in its synthesis of Italian salt-curing and central European smoking.The first historical mention of Speck dell'Alto Adige was in the early 1300s when some of the current production techniques were already in use. "Speck dell'Alto Adige (Südtiroler Speck)" is now a protected geographic designation.In the English-speaking culinary world, the term "speck" refers to Italian speck, a type of prosciutto, rather than German speck, which is identical to the Italian "lardo". The term "speck" became part of popular parlance only in the eighteenth century and replaced the older term "bachen", a cognate of "bacon".

Speck
Als Speck (möglicherweise von altindisch aphik für „Hinterbacke, Hüfte“) wird vor allem bei Schweinen das Fettgewebe bezeichnet, das sich zwischen Haut und Muskeln befindet. Dabei wird hauptsächlich zwischen Rückenspeck oder fettem Speck aus reinem Fettgewebe und Bauchspeck oder durchwachsenem Speck aus dem Schweinebauch, der mit Muskelfleisch durchwachsen ist, unterschieden. Daneben gibt es noch Schinkenspeck, der aus der Hüfte, dem am Rücken gelegenen Teil des Schinkens hergestellt wird. Die ausgelöste, unzerteilte Speckpartie wird als Speckseite oder Speckhamme bezeichnet.

Panceta
La panceta, beicon, bacón, tocino o tocineta es el producto cárnico que se encuentra bajo la piel del cerdo, y está compuesta de tocino (grasa) entreverado de carne (de ahí que también se la denomine "tocino entreverado"). Suele elaborarse y consumirse salada, y tiene un gran valor energético.En Europa se considera una comida de desayuno, y se consume con huevos, o añadida al cocido. Igualmente es un ingrediente de uso común en recetas tradicionales como pizzaespaguetis o arroz al horno entre otros. También es muy apreciado su uso en barbacoas, junto con embutidos.
