Sorrel soup is a
soup made from
water,
sorrel leaves,
salt and
egg yolks. It is known in
Polish,
Russian and
Yiddish cuisines under names spelled variously schav, shchav, shav, shtshav, derived from the Polish name for sorrel. It is a
kosher delicacy often served cold with
sour cream. It is characterized by its particularly salty taste and pungent aroma. In Polish and Russian cuisines it may be prepared using any kind of
broth instead of water and may be served either hot or chilled, often with a whole half of hard boiled egg per person and boiled potatoes.
