Sambal

Sambal is a condiment used in Indonesia, Malaysia, Singapore, the southern Philippines and Sri Lanka, as well as the Netherlands, made from a variety of peppers, although chili peppers are the most common. Sambal is used as a condiment or as a side dish, and is sometimes substituted for fresh chilis; it can be very hot for the uninitiated. It is available at exotic food markets or gourmet departments in supermarkets in numerous countries.

Sambals (ind. Chilipaste) sind dickflüssige, ursprünglich aus Indonesien stammende Würzsaucen auf Chili-Basis, die traditionell in kleinen Schälchen als Würzbeilage zu Gemüse, Huhn, Fisch und Reis gereicht werden. Das Sambal ist ein typisch indonesisches Produkt. Je nach Rezept variieren die einzelnen Zubereitungen beträchtlich in ihrer Schärfe.

Sambal is afkomstig uit Indonesië, en bestaat, traditioneel gezien, uit gemalen Spaanse pepers (of rawit, de zeer hete kleine pepertjes) en zout, maar er zijn allerlei varianten waarbij ook azijn, gebakken uien, gefermenteerde garnalen (trassi), suiker en allerlei specerijen toegevoegd worden. Sambal is een typisch Indonesisch product.
