SUGAR--WHITE-HARDENED
White sugar or powdered sugar hardens when it absorbs
moisture and then dries out. Keeping the sugar in an air-tight container should prevent it from hardening. Once it has hardened into a brick it is difficult to return it to the granular state. Dissolve it in water and use as a syrup for freezing fruit, sweetening beverages, etc. One pound of sugar is equal to about 2-1/4 cups of sugar.
Slightly lumpy sugar can be restored to its granular state by whirling in the food processor with the metal blade.
