Saj
Saj is a form of
bread used mainly in
Arabic cultures, it is commonly compared to a
pita bread. A saj is also the iron dome shaped 'pan' that is used to cook the saj bread on. It is placed over a source of heat, traditionally a wood fire, and the dough is placed on it.
