Ravioli
Ravioli is a type of
pasta, comprised of a filling, commonly (though not always) meat- (either red or poultry) or fish- based, sealed between two layers of thin pasta dough. Ravioli can be rectangular or circular in shape.Other preparations include
ricotta and vegetables such as
spinach, green beet stems or
nettles in place of meat. Fillings could be also be derived from
potatoes,
mushrooms,
pumpkin,
artichokes. Often topped with a red,
tomato based sauce, the sauces can be as varied as the fillings and attention must be paid not to "drown" the taste of the most delicate fillings with too strong a sauce.
Pesto, broth based and cream based sauces are more common in these instances.
