Polyphenols

Polyphenols are a group of chemical substances found in plants, characterized by the presence of more than one phenol group per molecule. Polyphenols are generally further subdivided into hydrolyzable tannins, which are gallic acid esters of glucose and other sugars; and phenylpropanoids, such as lignins,  flavonoids, and condensed tannins.

Les polyphénols constituent une famille de molécules organiques largement présente dans le règne végétal. Ils sont caractérisés, comme l’indique le nom, par la présence de plusieurs groupements phénoliques associés en structures plus ou moins complexes généralement de haut poids moléculaire. Ces composés sont les produits du métabolisme secondaire des plantes.

Polyphenole sind aromatische Verbindungen, die zwei oder mehr direkt an den aromatischen Ring gebundene Hydroxylgruppen enthalten und zu den sekundären Pflanzenstoffen gerechnet werden. Natürliche Polyphenole kommen in Pflanzen als bioaktive Substanzen wie Farbstoffe (Flavonoide, Anthocyane), Geschmacksstoffe und Tannine vor. Sie sollen die Pflanze vor Prädatoren schützen oder durch ihre Farbe Insekten zur Bestäubung anlocken.

Polyfenoler är en kemisk ämnesklass som återfinns i växter. Den kännetecknas av att molekylerna innehåller flera fenolgrupper (hydroxigrupper bundna till bensenringar). De delas ytterligare in i grupperna tanniner, fenylpropanoider och flavonoider. Polyfenoler anses vara antioxidanter.
