Aroma compound
An aroma compound, also known as odorant, aroma, fragrance, flavor, is a
chemical compound that has a smell or
odor. A chemical compound has a smell or
odor when two conditions are met: the compound needs to be volatile, so it can be transported to the
olfactory system in the upper part of the nose, and it needs to be in a sufficiently high concentration to be able to interact with one or more of the
olfactory receptors.

Odeur
Une odeur correspond à la
perception par le sens de l'
odorat d'une
molécule chimique ou d'un composé volatil, souvent qualifiée de molécule odorante ou de
parfum, ou de
fragrance dans le cas des fleurs. Le caractère agréable, neutre ou désagréable associé à une odeur par chaque individu est pour partie d'origine innée, et pour partie acquis, mais il dépend aussi de la concentration du produit dans l'air et du fait qu'il soit ou non associé à sa source naturelle.
