Lab, (auch Laab, Kälberlab, Käsemagen), ist ein Gemisch aus Enzymen (Chymosin und Pepsin) und wird zum Dicklegen der Milch bei der Herstellung von Käse verwendet.Jeder Käse, der mittels Süßmilchgerinnung erzeugt wird, benötig einen Zusatzstoff – Lab oder Labersatzstoff – zur  Koagulation der Milch. Nahezu alle bekannten Hart- und Schnittkäsearten kommen aus der Süßmilchgerinnung. Frischkäse hingegen wird typischerweise durch Sauermilchgerinnung unter Zuhilfenahme von Milchsäurebakterien aus Quark, teils auch aus Joghurt hergestellt und benötigt kein Lab.

Przestrzeń CIELab to przestrzeń barw, która została znormalizowana w 1976 przez CIE (Comission Internationale de l'Eclairage - Międzynarodową Komisję Oświetleniową). CIELab stanowi matematyczną transformację przestrzeni CIEXYZ. Transformację tę wprowadzono jako wynik badań nad spostrzeganiem przez oko ludzkie różnicy między barwami. Zakładano, że barwy znajdujące się w przestrzeni CIELab w jednakowej odległości ΔE od siebie będą postrzegane jako jednakowo różniące się od siebie. Zatem CIELab miała być równomierną przestrzenią barw. De facto przestrzeń CIELab jest jedynie zalecana jako równomierna przestrzeń barw. Dowodem nierównomierności tej przestrzeni jest fakt, że różnicy percepcyjnej barw nie można jednoznacznie określić za pomocą ΔE.
