For other uses of the term "Cheese", see Cheese (disambiguation). Cheese is a solid food made from the milk of cows, goatssheep and other mammals. Cheese is made by coagulating milk. This is accomplished by first acidification with a bacterial culture and then employing an enzymerennet (or rennet substitutes) to coagulate the milk to "curds and whey." The precise bacteria and processing of the curds play a role in defining the texture and flavor of most cheeses. Some cheeses also feature molds, either on the outer rind or throughout.

Goat's milk cheese
Goat's milk cheese, goat cheese or Chèvre cheese is cheese made from goat's milk (chèvre is French for goat). In regions where domesticated goats are kept, many kinds of goat's milk cheeses are produced.Although cow's milk and goat's milk have similar overall fat contents, the higher proportion of medium-chain fatty acids such as caproiccaprylic and capric acid in goat's milk contributes to the characteristic tart flavor of goat's milk cheese. (These fatty acids take their name from the Latin for goat, 'capra'.)

Also known as Chevre. A soft fresh goat's milk cheese sold in a variety of shapes (rounds and cylinders are most common). They are usually sold fresh, but some are marinated in oil. Montrachet and Coach Farms are among my favorites.
