Glutamic acid and its ions and salts, called glutamates, are flavor-enhancing compounds which provide an umami (savory) taste to food. Glutamic acid is a natural constituent of many fermented or aged foods, including soy sauce, fermented bean paste, and cheese, and is also a component of hydrolyzed protein such as yeast extract. The sodium salt of glutamic acid, monosodium glutamate (MSG), is a widely used additive in the food industry.

Bei einer sogenannten Glutamatunverträglichkeit, umgangssprachlich auch Chinarestaurant-Syndrom genannt, handelt es sich um eine angenommene kurzzeitige Intoxikation mit den  Salzen der Glutaminsäure (Glutamate), welche als Geschmacksverstärker eingesetzt werden. Es handelt sich nicht um eine Allergie, also eine immunologische Reaktion. Glutaminsäure ist eine nicht-essenzielle Aminosäure und hat im Gehirn die Funktion eines exzitatorischen (erregenden)  Neurotransmitters.

Syndrom chińskiej restauracji zwany także zespołem chińskiej restauracji – wystąpienie objawów takich jak: ból głowy, zaczerwienienie, pocenie się oraz uczucie ucisku w jamie ustnej lub głowie. Powszechnie uważa się, że zespół jest spowodowany glutaminianem sodu, lecz powtarzane badania naukowe nie wykazały żadnego powiązania.

Синдром китайского ресторана , также известный как синдром глутамата натрия — это набор симптомов, включающих в себя головную боль, покраснение лица, потоотделение, чувство тяжести в области рта. Существует точка зрения, что причиной синдрома является глутамат натрия, однако ряд проведенных научных исследований это опровергают.
