Apfelwein (German, apple wine), is an alcoholic beverage made from apples. It is also regionally known as Ebbelwoi, Äppler, Stöffsche, Apfelmost (apple must), Viez (from Latin vice, the second or substitute wine), and saurer Most (sour must). English speakers sometimes refer to it as German cider. It has an alcohol content of 5.5%–7% and a tart, sour taste. The name Äppler, mainly used by large producers, is generally not used in restaurants or by smaller manufacturers who instead call the beverage Schoppen or Schoppe which refers to the measure of the glass. The cider is mainly made from heating or cooking apples, such as Granny Smith and Bramley; and, in the Frankfurt area, berries from the Service Tree (Sorbus domestica), are added in bags to increase astringency, this specific type of Apfelwein is called Speierling.

El Apfelwein (del alemán: vino de mazana) es una bebida alcohólica extraída por la fermentación etílica del zumo de las manzanas muy típica de algunas zonas de Alemania. Es conocido con diversos dialectos como Äppelwoi (Ebbelwoi, Äbbelwoi, Öbbelwoi, Ebbelwei), Äppler o incluso Stöffche. Suele tener un contenido alcohólico que ronda entre los 5º y los 7º. El sabor característico es ácido. El nombre Äppler, se ha propagado entre la población debido a las campañas publicitarias de los grandes productores, sin embargo no es empelado en restaurantes o por pequeños manufactores, quienes suelen denominar a la bebida como Schoppen o Schoppe, haaciendo referencia a la medida del vaso.
