ANCHO--POBLANO CHILE PEPPER

Poblano chili peppers are relatively mild and their mellow
aromatic flavor combines well with other ingredients to make rich sauces and mild chile powders for Mexican cooking.
They are a dark shiny green color that ripens to reddish
brown and are useable at either stage. When dried, these peppers are called Ancho.
