The dough is piped into an oblong shape with a pastry bag and baked until it is crisp and hollow inside. Once cool, the pastry then is traditionally filled with a coffee- or chocolate-flavored pastry cream (crème pâtissière), custard or whipped cream, and topped with fondant icing of the same flavor as the filling. Other fillings include pistachio- and rum-flavored custard, fruit-flavored fillings, or chestnut purée.

Un pepito es un bollo fino hecho con pasta choux, a la que se da forma alargada y se hornea hasta que queda crujiente y hueco por dentro. Tradicionalmente se rellena el bollo con crema pastelera de vainilla o chocolate, o bien con nata, y suele cubrirse con chocolate glaseado. Otros rellenos incluyen crema con sabor a café, ron o fruta y puré de castañas.
